Jim Anderson, Naturalist and Writer.

Jim Anderson has been studying and banding raptors in Central Oregon for over 50 years, specializing in Golden Eagles, Osprey, Ferruginous Hawks and American Kestrels. Jim’s articles appear regularly in The Source Weekly and The Nugget Newspaper. He is also the author of “Tales From a Northwest Naturalist.” Jim has worked at The Oregon Museum of Science and Industry (OMSI) as a naturalist, and was also the director of the Children’s Zoo and Conservation and Education in what is now the Oregon Zoo in Portland. Jim has also traveled to Australia and lived with Aborigines in the Northern Territory.

Scott Beckstead, Oregon Senior State Director of The Humane Society of the United States.

In addition to his duties as the Oregon Senior State Director of The Humane Society of the United States, Scott Beckstead also teaches animal law at Willamette University College of Law. In earlier years, Scott was the mayor of Waldport, Oregon and he owned and operated his own law firm for 15 years. Jenny Brown is  an amazing woman who summoned the courage to battle cancer and the loss of her leg at the age of 10. You’ll hear how  that same courage sustained her later in life as she went undercover to film and document farmed animal abuse. Jenny worked professionally as a producer, director, and post-production supervisor but gave up her career to dedicate her life to helping the animals that society seems to have forgotten.

Jenny founded Woodstock Farm Animal Sanctuary in Woodstock, New York, along with her husband Doug. Her new book, The Lucky Ones: My Passionate Fight for Farm Animals, tells her story.

Author and activist Arthur Poletti reports on the incredible changes that are taking place within the hearts and minds of the people of Israel, owing to a video that has gone viral featuring Gary Yourofsky, an outspoken and somewhat contentious animal activist, who has served jail time due to his animal liberation actions.

After viewing the video, Best Speech You Will Ever Hear, a large amount of people, particularly from Israel, are reporting that they have gone vegan. The video has received the largest number of YouTube hits ever in Israel.

Gary Yourofsky politely declined to be interviewed by All Things Vegan, stating that he “hates preaching to the choir,” preferring to put his efforts into educating those who have not yet heard the information.

“Animal Lover” is by Vegan Smythe, a Melbourne, Australia based entertainer who’s putting a fresh spin on animal rights through satirical songs and comedy. Vegan hopes his work can be the spark to ignite the underlying vegan in everyone, as well as being entertaining and motivational for those who are already vegan or on a path in that direction.

The project is brand new—he started writing in April of this year, and he’s hoping to start touring his live show, “Vegan Smythe Superstar” within the next 12 months or so. Earlier this summer, CJ (Calamity Jane), a privately owned “pet” in Las Vegas, escaped her home along with her companion Buddy. They made their way to a suburban neighborhood. Unfortunately, law enforcement officials were able to tranquillize CJ, but not Buddy—who was tragically shot and killed when he was deemed a threat to humans.

We talk with Sanctuary Director Marla O’Donnell of Chimps, Inc. to learn the story of how CJ made her way to become a permanent resident of Chimps, Inc.

Marla started out at Chimps, Inc. as a volunteer, and after 8 years of constant dedication to the chimps, she recently became Sanctuary Director.

In spite of her recent trauma, 13-year-old CJ seems content in her new home and has been welcomed by the other Chimps. Raised in a human environment, she enjoys looking at magazines, playing with squirt guns, dolls, and tape measures, and eating a variety of fruits and veggies.

Heather Kennedy had the opportunity to be a camp counselor this past summer at YEA Camp, a fun and enriching vegan leadership summer camp for teens. She gives us a day in the life view of camp and reflects on what she learned and the relationships she formed. Outside of camp, Heather is a Zine artist and active in many social justice issues such as AIDS awareness. She loves babying her rescued chickens.

Vegan Bite:

Recipe from Jeff Novick, Nutritionist, Dietitian, and Chef

For a really quick and healthy meal, Jeff says you can put this together in 10 minutes.

Pre-cook two large potatoes

While the potatoes are cooking, put in a pan the following items:

• 2 boxes Pomi tomatoes
• 2 cans beans, any kind
• 2 packages frozen vegetables of any variety
• ½ bag frozen onions
• Spices of your choice: curry powder, garlic, pepper, etc.

Heat over medium heat and when potatoes are almost done, chop and add to the rest of the mixture, and voilà—dinner is ready.

This is a template that you can use to make many different recipes. By varying the beans and vegetables and exchanging the potato for whole wheat pasta or brown rice you can make Italian or Mexican dishes, and even soup, by adding two boxes of water after you pour the boxed tomatoes in.

Euthanasia is the #1 killer of animals in our country. And, because of that, I personally feel that our sheltering system, the current system that we have, is a failed system. I don’t think it’s sustainable, and that we need to really focus on looking at new, novel approaches, and that’s where this movement is going.

Dr. Byron Maas has been practicing for over 20 years in companion animal medicine and surgery. Previously dubbed the “King of Spays” (Animal Affairs Journal 2006), Byron is passionate about population control in companion animals worldwide.

He has served on the Humane Society of Central Oregon board of directors and initiated their in-house shelter medicine program. He was instrumental in establishing the mobile SNIP clinic serving the greater Central Oregon region. Realizing that there was a serious need, he co-founded the Bend Spay and Neuter Project to address feral cat issues through Trap Neuter Return Programs (TNR) and low cost sterilization programs.

In the islands of the South Pacific, Dr. Maas was the first veterinarian to volunteer to establish the Esther Honey Foundation’s clinic in Rarotonga and currently sits on the board of directors. He’s also on the advisory board of the non-profit group Animal Balance and volunteers for high volume, community based sterilization campaigns with them in the Galapagos Islands, Dominican Republic, and the Samoan Islands. He collaborates with many NGO’s and is a certified international instructor to provide training in the proper techniques of chemical sterilization with Esterilsol (also called Zinc Neutering)..

Ocean Robbins

We talk with Ocean Robbins, whose name you might recognize, but who has a long list of accomplishments that many are not aware of. Son of John Robbins, who has authored numerous books, including Diet for a New America, Ocean grew up well versed in how our food choices affect our health and our planet. Ocean has been an activist since the age of seven, when he organized a peace rally in his elementary school. At 16, he founded YES! (Youth for Environmental Sanity) in 1990, which has been a huge influence on thousands of young people and inspired them to work toward a better, more sustainable, and just future for all.

Ocean also served on the board of Earth Save International and Friends of the Earth. He tells us about the upcoming Food Revolution Summit, an online event for everyone. In addition, he’s also the author of two books, Choices for our Future and The Power of Partnership.

Ocean speaks widely, spreading a message of hope and inspiration to conferences, companies and organizations. He’s won numerous awards for his outstanding public service.

Veg Out ‘N About (in Central Oregon):

The motto of Rockin’ Daves Bagel Bistro & Catering Co. is “Serious food, not so serious people.” And that is what you’ll find at this unpretentious and reasonably priced little cafe off the beaten path on Greenwood in Bend. Although both Daves are professionally trained chefs that specialize in made from “scratch,” local, and organic foods of all kinds, they offer a few unexpected vegan options.

There are 18 flavors of NY style, boiled bagels made daily—many of which are vegan. Vegan cream cheese is not mentioned on the menu, but is available on request, along with hummus and fresh ground peanut butter. All of their breads are made from scratch and baked in-house as well. Other items on the menu include the veggie sandwich, roasted beet salad, and rotating soups each day like Ginger Sweet Potato with Coconut Milk, which was clearly marked as vegan on the menu board. On the Cheap Eats section of the menu you’ll find the bagel with hummus, cucumber, sprouts, and tomato, and the house-made peanut butter and jelly. For breakfast, you can build your own breakfast burrito with hash-browns (cooked in oil) and all the veggies available, with the option to add avocado. The breakfast burrito came with a delicious assortment of fresh vegetables including broccoli, asparagus, cauliflower, yellow squash, and Brussels sprouts. A full bar is also available.

Jennifer Kirkpatrick

Think trapping doesn’t hurt animals? Central Oregon resident Jennifer Kirkpatrick begs to differ with you. Jennifer tells the harrowing story of getting her arm stuck in a trap meant for a beaver, how she had to hike out with the trap on her arm and then drive herself to get help, and the nine months of excruciating pain that followed. We learn how the experience profoundly affected her, as she was thankful that it was her arm in the trap, not the limb or head of a helpless wild or domestic animal (like her own dogs). At least she was able to drive away to get help! Jennifer has since become a vocal advocate for banning all types of trapping.

Luke & Jilly McCullough

When Jilly McCullough decided to become vegan, she didn’t know about the plight of the animals, factory farming’s effect on the environment, or even the health benefits. She just wanted to lose the 50 pounds she had gained while a freshman in college. After crying herself through the chapter on the horrors of factory farming in John Robbins’ Diet For a New America, weight loss became secondary. It was time to embark on a new lifestyle, one that did not contribute to such suffering. Jilly got married and went on to raise her three children on a plant-based diet, and never looked back. (And she lost the weight, too.)

Luke McCullough slipped into the vegan world with ease. A vegetable lover and longtime chef, it was a relatively simple transition for him. His biggest struggle came from pulling away from the long-held hunting culture of his family and friends. Reading Ishmael, by Daniel Quinn, had a profound influence on him as he took a step back to examine some long held beliefs. He’s now creating new traditions for his three kids, ones that do not include bonding through death; on their hiking and camping trips they will carry a camera, not a gun. Luke feels much better than he ever did when he was on a meat-based diet, and is thankful for that because it takes a lot of energy to keep up with three young kids who “never, ever stop.”

Veg Out ‘N About (in Central Oregon):

Sarah’s Raw and Vegan Cafe, a tiny but inviting space tucked into an out of the way back alley, opened this month and is already very busy. Sarah’s features a wide selection of freshly made superfood smoothies, raw granola, raw crackers and cookies, and special raw entrées and desserts for lunch. Entrées include colorful dishes such as Cream Curry over spinach, “raw chili,” and zucchini and yellow squash “pasta,” and the dessert of the day could be something delicious like raw banana cream pie. All items on the menu are raw, and most are vegan (with the occasional exception of honey in some items). Orders can be placed ahead, but there are always extra smoothies and more on hand. There’s a small seating area inside and more room on the porch for those nice weather days.

Raw Uncooking classes are held every Friday at 1:30 p.m. Sarah will teach participants how to make a raw healthy vegan dish. Everyone receives a copy of the recipe and gets to enjoy the meal. Sarah’s is located in the back of Cafe of Life Chiropractic at 519 NW Colorado Ave, Bend. Hours are Monday through Thursday 8am-4pm and Friday 8am-2pm.

• 4 tomatoes
• 2 avocados
• 1/2 cup sun-dried tomatoes, soaked
• 1 T ginger
• 2 tsp sea salt
• 1 T (flat) chili powder

Creamy Triple-Mushroom Fettuccine with Walnuts

For this month’s vegan bite, we are featuring the Creamy Triple-Mushroom Fettucine with Walnuts from Big Vegan. As Big Vegan author Robin Asbell puts it, “This pasta is an opportunity to amplify and showcase the umami of mushrooms, with layer after layer of intense mushroom flavor. For the fungus lovers among us, this creamy, meaty pasta is a plateful of heaven.”

This scrumptious looking recipe includes dried mushrooms, thinly sliced fresh shiitake mushroom and portobello caps, as well as seitan, white miso, white wine, tomato paste, nutritional yeast, toasted walnuts, and a variety of surprising herbs and spices.
