Rip Van [Winkle] Esselstyn: Plant-Strong Triathlete + Firefighter = Engine 2 Diet. Plus: “Vegan Sid” tells of a look behind factory farm walls.
We catch up with Rip Esselstyn, author of The Engine Two Diet. Rip, unlike his namesake, is a very industrious man.
A world-class triathlete turned firefighter, Rip Esselstyn learned that one of his fellow Engine 2 firefighters in Austin, Texas had a life-threateningly high cholesterol level. During his 10+ years as a professional triathlete, Rip had adopted a plant-based diet at the advice of his father, Dr. Caldwell B. Esselstyn, chief of surgery at the Cleveland Clinic. (Dr. Esselstyn discovered through medical research that a plant-based diet, low fat diet could reverse heart disease and diabetes.) Rip put this knowledge to work in helping to motivate the entire Engine 2 firehouse to transition to a healthy “plant-strong” diet. Out of this experience, The Engine Two Diet was formed.

Cafe Yumm!, a uniquely Oregon franchise, has many vegan menu items, or items that can be easily modified to be vegan. There are many Yumm Bowl variations, which can made vegan by omitting the cheese and sour cream toppings. (Note, they have Vegenaise available as a condiment.) The Tempeh Reuben sandwich can be made vegan by omitting the cheese. And Cafe Yumm’s own Ginger-Garlic Veggie Burger (with sourdough bread) is, as they say, “unbelievably vegan.” Baked & glazed tempeh or tofu skewers are available as well, along with a Ginger Spice vegan cookie. There is generally a vegan soup or chili available, along with a salad selection. Cafe Yumm! also sells their egg & dairy free Original Yumm! Sauce in stores locally. The Cafe Yumm in Bend is located at the Old Mill and is open 7 days a week.
